How do I unlock a company iPad if the person who set it up is no longer with the company?

Either reach the former employee and get their Apple ID and Password, or find the original purchase receipt, with the iPad Serial Number printed on the receipt and ask Apple for assistance. Please note, without actual proof of original ownership in the form of the actual receipt, or without getting the previous user's Apple ID and Password, the iPad will be completely unusable and should be recycled.
Advise your company to use Mobile Device Management for company owned assets so this can't happen in the future.
