[iOS 12] How to edit icons of sites on favorites tab?
I wanna know how you edit the site icons in the favorites tab from the default letter on the icons. So that I can recognize my favorite websites better :]

There is no way to do that. The only alternative you may have is to actually save a site on the home screen as a shortcut, which will then have a specific icon on the home screen. However, that would not appear on a blank opening of Safari which shows Favorites, which I realize is what you were referring to.
