Verizon and Apple IPhone XR , IPad Air and Verizon Jetpack 4G ZTE 890L-E0DI

I am not enjoying the experience that I always hear of with Apple products and how secure they are:

I have 2 new Apple store purchased IPad Air and iPhone XR but I am always trying to get answers fixes which I think is Verizon end due to

No Smart or Quick set up

Unable to secure settings unable to encrypt by default and the other sign ??

No APN or MMS settings not MDM to see if Verizon configurations securely via Apple mobile configuration or DEP

i found a strange Safari bookmark ( seleccion@cyltalentohumano.com Verizon-vp..Verizon vpn settings) Can someone tell me what this is? Is it a domain or email, I also been getting spam messsages and unknown callers even though I blocked unknown and Verizon tells me it is Apple issue .

Can I use any tools to harden my security without having to drive hours away or spending useless hours on phone and getting no where I have to add I am dealing with metastatic disease so my brain is not so good but I do know my devices are unable to pair , I did reactivate my old Verizon 800L Jetpack to have WiFi to get updates Apple but strangely I am getting Apple updates. Now try cellular, what a mess . I heard there is a Apple IPhone utility and also Apple configuration app and I need something like this that will configure and secure my mobile data settings along with securely pairing my IPad with IPhone XR along with my old Jetpack that has troubles getting correct IP address and port.
