Your iPhone, iPad, and iPod touch backups only include information and settings stored on your device. They do not include information already stored in iCloud such as Contacts, Calendars, Bookmarks, Notes, Voice Memos3, Messages in iCloud

1. When you use Messages in iCloud or turn on iCloud Photos, your content is automatically stored in iCloud. That means they're not included in your iCloud Backup.

What happens when you delete messages or turn off the Messages in iCloud feature

With Messages in iCloud, when you delete a message, attachment, or conversation on one device, it deletes from all of your devices. This can help free up some space in your iCloud storage, while keeping the rest of your conversations up to date across your devices. Once you delete a message, you can't get it back.

If you don't need to keep your conversations up to date across your devices, you can turn off the Messages in iCloud feature. If you turn off Messages in iCloud on an iPhone or iPad, your message history is included in a separate iCloud backup.

If you are using iCloud Syncing for Messages, once you delete a message, it's gone for good from all of your devices.

If you aren't using iCloud Syncing and you have a back up that contains the messages, you can restore your phone from that back up:

Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

Note that doing so will overwrite everything currently on the iPhone.
