Are there problems with iOS 14.1 with iPhone and apple watch
I am using an iPhone Xs MAX and Apple Watch Series 5. My other combination is an iPhone X and Apple Watch Series 4. Both combinations are on iOS version 14.1
I am not experiencing any issues with the above.

Updating to iOS 14 has nothing to do with the Watch, that is the phone iOS. The latest watchOS is 7.0.2, depending on your Series. Since you do not indicate what problems you are experiencing with updating iOS, here are general instructions, Update your iPhone, iPad, or iPod touch - Apple Support and this for trouble with updating, If your iPhone, iPad or iPod touch won’t update - Apple Support
The iPhone has the App for the Apple Watch on it. It controls many uses on the watch. One is the watch face which can be changed using the iPhone app. The activity and health apps are on the iPhone . So, the update on the phone could cause a problem with the watch.
I understand that the Watch app exists on the iPhone. However, your question was rather convoluted, since you ask about how to update to iOS 14, which would be on the iPhone, then ask if there is a problem with iOS 14.1 and the Apple Watch. Even your reply to Axel does not indicate what issues you experienced in updating, if it is a problem updating the iPhone, or if it is a problem updating the Apple Watch.
We are all very willing to help, however you need to be more detailed and describe your issue in updating for help. I just provided you the generic instructions for updating your iPhone.
Thank you for your answer. I have an iPhone XS MAX and a Apple Watch Series 6 so your answer told me that I should not have a problem updating.
Based my experience, you should not have an issue.
