Click apply to all files in Get Info, after that just double-clicking will open a pdf in acrobat.

Secondary-click on a PDF file, select Get Info. In the Opens With section, select Acrobat Pro and tick the box to apply to all files of that type.
Thank you! I have been doing this but was hoping to find a way to have Acrobat open the file immediately without the secondary step. Appreciate your quick reply! BTW, have you upgraded to Big Sur?
