I have an iphone 11 and only have 6 months left of monthly installments until my phone is paid off - am i able to trade this in now? and also am i able to trade this in for cash or does it have to be towards another product/gift card?

You can’t trade it in until it is paid off. If you want cash, you will need to sell it yourself. Apple only gives store credit or credit toward a new phone.
This is a user to user forum. None of us work for Apple. Apple no longer sells the XS max phone. You will have to chose a different model.
