New iMac as a monitor?
Can I use the latest iMAC 2021 as a monitor with macbook pro 16 (2019)? And if yes, how can I do it?

That is not possible... yet.
However with the upcoming MacOS Monterey a new planned feature is Airplay to Mac which would allow using an iMac as an extended display for a Macbook Pro (or vice versa) provided both are 2018 and newer running Monterey. https://www.apple.com/macos/monterey-preview/features
Of course, Monterey is still in Beta so release features could change.

Sorry, no. Any Mac computer newer than 2019 is not compatible with Target Display Mode.
