How can I update my IOS on my iPad from 10 to at least the 11?

To update your iOS version to iOS 11, the iPad will have had to have been introduced in 2013 or after.

That will be iPad Air, iPad mini 2, iPad 5th gen or iPad PRO.

The best the iPad 2 can do is iOS 10.3.4

I will say that after a little digging I've found the model MD944LL/A seems also to correspond to iPad 4, maybe reintroduced in 2014, but I can't confirm it. And that model also has a maximum iOS version of 10.3.4. (per Mactracker app).
