The clock in my menu bar disappeared after installing Monterey. Yes, I know how to access the Dock and Menu Bar feature in System Preferences but I can't find a way to make the clock reappear. It's incredibly annoying.

Give this a try: boot into Safe Mode according to How to use safe mode on your Mac and test to see if the problem persists. Reboot normally and test again.
NOTE: Safe Mode boot can take up to 3 - 5 minutes as it's doing the following;
• Verifies your startup disk and attempts to repair directory issues, if needed
• Loads only required kernel extensions (prevents 3rd party kernel/extensions from loading)
• Prevents Startup Items and Login Items from opening automatically
• Disables user-installed fonts
• Deletes font caches, kernel cache, and other system cache files

Somehow, rebooting today worked where yesterday it accomplished nothing. I hate random issues like this that just magically disappear. I guess we're just dealing with systems that have become so complex that it inevitably starts to seem like there are imps running around to drive us crazy.
Some other things to try…
Make sure "Digital" is selected in System Preferences > Dock & Menu Bar > Clock.
It was already set to Digital. Thanks for trying.
Did you try toggling it to analog then back to digital?
If that doesn't work, try restarting your Mac.

I don't think that's it. The clock displays in Manitou Springs.
I did try toggling it back and forth between settings. I also tried rebooting several times yesterday.
Well, glad to hear it's sorted in any case.
To be honest I've never heard of the clock not showing in any version of macOS/OS X. First time for everything. 😎
I had the same issue with Monterey. Robooting was no help, nor toggling the clock's settings. Switching to safe mode and back fixed the problem
