Removing history on iPhone 7
Unable to remove history from iPhone 7 since update to iOS15. Solution says to use Settings, Safari, Clear History and Website Data . Clear History and Website Data is grayed out.

One possibility -- that option will be grayed out when there is no history or website data to clear. To verify, try using Safari to go to google.com (for example) which will create some history/website data and then go back to the Settings and see if it is still gray.

Even attempting to remove them individually does not work. Message appears - "you searched for this before. deleting (name of search) from your history will permanently remove it from your device" Specific text of search disappears but you end up with a long list of blank requests with the 'x' at the right side.....nothing is deleting.
Most all recommendations for clearing history are out of date - presumably because the specific screens mentioned have been changed. Or in the case of "Settings / General / Restrictions / Allowed Content / Websites...make sure all websites are allowed" there is no "Restrictions" section under General.
I tried that - it is still grayed out.
Do you have any restrictions turned on in Settings > Screen Time?
Very little under screen time restrictions other than allowing downtime from evening until following morning.
