I have someone I used to contact frequently, that I rarely text/call now. I don’t want to delete the contact, I just want it off my favorites list. How do I do this? All other sources require you to delete the contact.

Open the Phone app, and tap 'Favourites' at the bottom. Then, either swipe left on a contact — in order to remove it from the list — or you can tap 'Edit' and then the red circle next to the contact. This will not delete the contact from your phone.
