WhatsApp on CarPlay
WhatsApp can’t read new incoming messages when connected to CarPlay.
WhatsApp services said it’s probably a Apple problem because their settings and services will work fine.

Next, we'd confirm that WhatsApp is enabled for cellular data in Settings > Cellular and that Cellular Data is enabled here at the top, as well.
If it continues, CarPlay works with the Messages app and other apps without any issues, then you'd want to contact WhatsApp again for their next steps. The fact that you can use these other apps without a problem makes it clear this issue would be best supported by WhatsApp Support: https://support.apple.com/HT207959 or contact WhatsApp Support here: https://www.whatsapp.com/contact/
Since they've developed the app, they'll know how to take it from here.

Since you've tested it in several vehicles, let further narrow down what's going on. Is CarPlay able to read incoming messages sent through iMessage on your device? We want to see if the WhatsApp app is the only one with issues being used through CarPlay.
Also, have you checked for WhatsApp updates in the App Store? You may have some app updates if you've updated your iOS recently.
Lastly, we'd recommend removing the WhatsApp app, then reinstalling it.

The software is up-to-date on my device and CarPlay it self in the car.
My problem occurs on three different vehicles, my own personal vehicle and the two vehicles from work (with came fresh from the factory 2 month ago)
I did the steps described in your answer and it did not work. :(
Hello, I deleted the app and reinstalled it but the outcome remains the same.
WhatsApp will say ‘we have a problem try again later’ when a incoming message comes in and when I try to speak to it through CarPlay.
With other apps like iMessage I don’t have any issues at all, it works perfect.
