When I log in to iCloud and choose mail preferences it doesn't give me the option to delete or change the IMAP email address. It's one that I really need to change as it's in my ex husband's name and I really don't wish to see it every time. It's not the email tied to my iCloud account.

You can also edit mail address from Mac system preferences Set up your Apple ID name, phone and email information on Mac - Apple Support
Note : the mail address or first and last name can't be edited from mail preferences as mail account is added / configured from internet accounts .
