i do some contracting work with an organisation that requires that my computer has a Trusted Platform Module. How do I know if my Macbook air has this? And my iphone?

TPM is a feature required by Windows 11 and by some add-ons.
TPM is implemented either directly in hardware or emulated by a hypervisor.
Mac does not have a TPM, nor does iPad or iPhone.
Mac uses different hardware for related purposes; either the secure enclave in Apple silicon, or the T2 secure enclave in Intel Macs.
Both TPM and T2 have had security flaws.

As far as I know, a TPM module is only required by the Windows 11 operating system on the PC platform. Your MacBook Air & iPhone are not affected by this as they run macOS and iOS respectively.
Try a Google search for "TPM module". You find a ton of info out there.
