You can go to settings -> Touch ID & Passcode -> turn off touch ID by toggling the red button to white/grey. Your manual passcode will then be the only password to your phone. This can also be set to either be a short 4 digit number or your own choice of any combination of numbers, symbols, and letters, up to 32 characters.
