It is not easy to find...
On the Home app home screen tap on the house icon (not the word).
From the list that is displayed select Room Settings.
Select the room you wish to delete.
Swipe to the foot of the window that pops up
Select "Remove room" and confirm the deletion
It is a similar sequence for editing a room's properties.
(Note this is the sequence for an iPad - an iPhone might be a little different)
