Third party iphone back-up possibilities
Is it possible to back up (manually), a friend's iphone 5 on my MacBook Pro and then restore the data to his new phone?

Then, if not already present on your MBP, you need to download/install iTunes.

Yes, of course (depending on your MBP macOS version: if older than Catalina, you'll use iTunes, if more recent = Finder).
