I no longer have the number that is associated with my old apple id nor do I have the phone. How do I recover my data from that account and how do i remove the email address that was associated with that phone?

We would like to see how we can help you with your Apple ID. Do you have any other trusted devices associated with your Apple ID? If so, follow the steps in this link to wither access your Apple ID or start the account recovery process if you are still unable to access your Apple ID: Get a verification code and sign in with two-factor authentication - Apple Support
