My photos are organized into albums on my Mac. Will the albums show up in iCloud?

Yes. If you turn on iCloud Photos as described in Set up and use iCloud Photos - Apple Support the albums will sync with iCloud. It can take a long time to fully sync and when I first did it, the album organization was one of the last things to complete syncing.
