I accidentally selected the wrong contact as "My Info" in Settings>Contacts. My info is not listed in the contact list. How can I either remove the wrong contact and have none or else add my own contact and use it instead?

Create a contact for yourself in "Contacts". Then, go to Settings>Siri & Contacts>My Info and select your contact.
