How do I change my document in Pages to Word I order to send

Since the latest update, I’m unable to find the function to change my Pages documents to Word, so I can send it to those who don’t have Apple ID?

Click on the open Pages document name on the iPad (16.3) and that will expose a secondary menu for Print and Export. Pages v12.2.1 for iOS/iPadOS 16 still lets you choose the export format and medium (Mail) to automatically attach a .docx to the Mail message.
