That is due to Auto-Brightness feature controlling the brightness according to ambient lighting conditions.

Here is more information about 👉 Adjusting the brightness and color temperature on your iPhone or iPad


If you would like to control the brightness level manually, then open Settings ➡️ Accessibility ➡️ Display & Text Size ➡️ Auto Brightness: Set this switch to OFF and control brightness level manually with the use of Control Center.


You can access the Control Center by Pulling Down from the Top Right Corner of your screen and slide the brightness control up or down to your desire.
