Seems you can only show or hide spreadsheet gridlines:
Change table grid line and colours in Numbers on iPad – Apple Support
Eg says:
"Change the table outline and grid lines: Tap the table, then tap
Tap Table, then do any of the following:
Show the outline: Turn on Table Outline.
Change the grid lines: Tap Grid Options, then tap to turn grid lines on or off.
If you don’t see these options, swipe up from the bottom of the controls.

You can alternate the row colours if that helps:
"Tap the table, then tap
Tap Table, then turn on Alternating Rows.
Row colours don’t alternate for header columns. Header columns have their own look based on the table style you select".

Depending on your Printer and its settings:
you may be able to darken the whole spreadsheet printout, so grid lines appear bolder as well.
