Watching some WWDC videos are always fun and you learn what's coming to iOS and iPadOS. Obviously going back the features are already there, but you still learn more about them!
You should check out - https://training.apple.com/. It's not specific to iOS and iPadOS, but you can either learn App Development or IT Training (so macOS too).

You can download the iOS manual using the Books app on your phone, and there is also a Tips app with hundreds of useful tips and guidance.
Allready been though those. More in depth css js etc
Then join the developer program and get the online developer manuals. You will also need a Mac and the Xcode IDE.
