I am trying to set up my apple pay, it will not let me update my email address

If you close the account, all the data stored on the iCloud account associated with it will be lost, this includes subscriptions, apps/games purchased etc., when it is closed. You’re allowed to have multiple Apple ID’s.

I’m going to suggest at this point that you contact Apple Support and they can take a look at what is going on and try to help you best manage your data moving forward. The key will be explaining that you have two Apple ID’s and see how they can help you.

What won’t let you update your email?

So, you can’t sign into your Apple Account, is that correct?

It sounds like you created two Apple ID’s. Apple ID’s must each have their own unique/separate email address. You cannot combine Apple ID accounts.
