First, try sending an issue report to Apple by going to your business’s listing, then the 3 dot symbol, then choose the option to report a problem. Select “Other or multiple things are wrong”, choose that the business is open, and add the business hours. A photo might help with the review process.
You can manage your Apple Maps listing through Apple Business Connect. Requests through Business Connect should go through much faster, as it recognizes that it’s from the business owner.
