During setup of a new MacBookPro, I am not sure I want to migrate from my last installation on an older Mac mini can I return to the option later? What are the benefits of doing this up front?

if you DON'T do it up front, you won't be able to bring over an Account with the EXACT same Userid or UserShortName later, because they will collide. if they collide, Migration Assistant will modify the incoming names slightly, or you can ask it to Merge them.
Just make sure you create a new slightly different name you are happy with, then you can migrate (or not) at your leisure with no worries.
