Finding out last date of back up and retrieving it

I am stressed to the max with technology, it does not make life simple to me personally! Long story straight and hopefully to the point! My phone is at max capacity has been for some time I have been deleting things regularly and I believe it backed up what I absolutely wanted.

So on top of crashing and being overfull it asked me to confirm my ID well I have been declining based on instinct and today I think I hit yes and updated well now it deleted all my recent work contacts , emails, notes and even calendars I had specific appointments on there clear up to a year and contacts I have no way of just getting back ! Even texts were deleted so i cant skim through and figure out who is who. I know they were deleted because thankfully some I did write down the old fashion way .

My question is A. how do I find out when last back up date was,

B. How do i get things off say on USB now I dont even trust the cloud ,

C. Once I find out back up date, How do i reset and restore to that date.

For now I have all backups turned off just in case it decided somehow to magicly update on its own for whatever reason now that enough got deleted to create space.

I even have an app i would like back because its a game i put a lot of time and effort (no judgments but started as a demo and tester now 2years into it ) obviously good game !!

But really my main concern is calendar and contacts! If my game is stored in my discord and my account correctly that shouldn't be an issue .
