Apple Pay showing payment with an expired card but payment done with default card

Apple pay is showing payments being done under an old expired card during payment and on the receipt but the payment is going through the current default payment card. Why does Apple Pay display the wrong number when it isn’t even in my Wallet or Apple Pay settings anymore. Does this mean that Apple is retaining personal payment information despite me deleting it?

Depending on the card you’re selecting to use, it has multiple numbers. There is the number associated with the physical card and when added to Apple Pay, or any electronic wallet, it will get a different number. This is part of the enhanced security and privacy protection Apple Pay provides. The last 4 digits of the Apple Pay number is available in your Apple Wallet app and may be required for returns and refunds.

So are you saying my receipts all mentioning the wrong last 4 digits is working as intended? I don’t actually see this privacy protective Apple Pay number anywhere in my wallet app. It simply shows my current card’s actual last 4 digits and I don’t see the other number. Can you tell me where in the wallet app I would find this Apple Pay number please?
