Can I use cellular connection of my watch 9 to my iPhone ?
I would like to know if I could add the connection to my iPhone so I can do activities and wear my watch without carrying my phone

No, sorry, this isn't possible. If you've very recently bought your Apple Watch, see if you can return it and get the GPS + Cellular model.
