Apple Watch SE - Wifi returns overnight while I sleep

When I wake up in the mornings my Apple Watch SE shows connection to my Wifi network even when I have turned Wifi off before bedtime. I have owned the watch for a few years now but only recently toggled Wifi off consistently to conserve the battery.

No matter my preference (Wifi off) I wake up every morning to see that Wifi has been connected (presumably overnight while I'm sleeping). I want to disable Wifi and manage when it is in use yet I'm consistently overridden (based on my results).

Can anyone help me manage my Apple Watch settings so the Wifi desists connection without my knowledge or management? Thank you!
