And the sensors really aren't the prime source of EMF in a Watch anyway (if they generate any at all). EMF comes by far the most from the radios; Wi-Fi, Bluetooth, and cell if you have a cellular model. And none of those signals are going to be an lower than in previous models or the Watch wouldn't function properly.

but the EMF of anything you are likely to have in your house of various phones and computers and the likes is dwarfed by the EMF you are exposed to from broadcast of AM/FM radio and broadcast tv signals
You can turn off the heart rate sensor, but then it will not function in the background, and it can only function when you turn it back on
Why are you worried about EMF levels? They have nothing to do with your health.
