delete apple pay

Apple Pay cannot be removed, it is built into your device

Apple Pay is a service and if you don’t want to use the service, do not add your cards to Apple Wallet app. Apple Wallet can be deleted. You’ll want to turn off Apple Cash at this path,

iPhone > Settings > Wallet & Apple Pay > Apple Cash > disable
