I have set my email send delay to 30 seconds. But how do I undo the send? If it is within the 30 second period and I have clicked away from the window? Is it just a matter of going EDIT>>UNDO? What if I have done something else on Mail since then, but I want to retrieve that email? Is there anyway of making it longer than 30 seconds?

Edit > Undo, yes.
