Numbers, Cell / Data Format / Custom Format, how change token currency to a different currency.
There is not anyway for me to change from £, I use different currencies on my spreadsheets.

Unless you need a custom format, you can use the built-in currency format and choose the currency symbol.
In the custom format, after you place the currency symbol in the format, click on the little down arrow in it to change the symbol.
