Numbers loses the color profile

Apple Numbers allows you to choose the color profile for lines, cell fills, etc.

When I select the CMYK color mode and choose the "Coated FOGRA39" profile, it initially appears to accept my selection. However, when I save and reopen the document, the selection disappears, the colors are converted to RGB, and the color profile is ignored. This seems to be an issue.

Can you share how you are adding a color profile to a Numbers spreadsheet? I'm not seeing an option to do that.

If you are referring to the Color Picker, changing the color profile in that allows you to preview how your colors appear in other profiles. After you close it, it maps your color to a color in the system color profile. The color picker color profile is only for preview purposes, not saving or printing.
