I bought a ROOFULL External HD to use since the iMac no longer has the internal DVD or CD drive. I would like to transfer my DVD's & CD's to my iMac computer. How is this done?

This isn't an Apple issue. It's because the entire industry has moved to USB-C connectors.
You can use a simple USB-A to USB-C adapter like this one or an Apple USB-C to USB adapter. The old Apple SuperDrive is supposed to work with the new iMacs but you need an adapter like the ones above. Be sure to plug the SuperDrive directly into one of the USB-C ports on the iMac; it won't work through a USB hub.
In my opinion it's time to look for a replacement. But you will still need a USB-A to USB-C adapter with almost all of them. Pioneer makes a very nice line of BD/DVD/CD drives at reasonable prices. I'm partial to the BDR-XD08S model.
As for DVDs as long as they are for personal use and not distributed further it's legal to make a backup copy.
You can do that with an optical drive and Disk Utility via DU's File ➙ New Image ➙ Image from folder… menu option.
Then choose the VIDEO_TS folder on the DVD.
Recently bought a new iMac with no way to connect my Apple USB SuperDrive. I've used the SuperDrive for years to transfer music from CDs That I Own to my Apple Music Library that will sync to my iPhone so I can play music That I Own when I wish. Is there some adaptor cable that will allow the SuperDrive with its USB plug to connect to the non-USB ports in the back of my iMac? It seems ridiculous that two new Apple products cannot connect together.
Use the Music app to import your CDs. See the Apple Music User Guide for Mac - Apple Support
As for DVD's, assuming they are commercial DVDs, it would not be legal to copy or digitize them.
