is it possible to set up a pin to login with or do we always have to use a password?

Sorry, no, there is no PIN functionality in macOS like there is in Windows 11.

You can use your Apple Account to login, or can set a password of digits only and use that, or (once logged in) can use biometrics or Apple Watch.
