Another option (depending on the application you're using) is to use View menu > Zoom out until everything you want is on the screen, then take the screenshot. I do that (for example) to get a long receipt/invoice as a single image for expense reporting. If you're in Safari, you can also secondary-click on the webpage and select Save page as... then pick png, which will give you a screenshot-like version of the full page. Like this webpage:

In any application that can print, you can use the Print command then click the PDF button at the bottom toward the left, and the full length will be saved as a PDF file.

As stated, more information on what you're actually trying to accomplish would most likely generate more specific and helpful answers.

What do you mean by "long" screen shot?

Screen shots are either the whole screen, a section defined by you, or a window, depending on the option you use.

command+shift+3, command+shift+4 or command+shift+5.

If you are trying to get a full page screen shot from a website for instance, that is only available when using Safari on an iPad, and you select "Full Page" after the screen shot has been taken.

On a Mac you can save a full website page as a PDF though, by choosing Export as PDF from the File menu in Safari.

If you mean something else, please clarify.

Try this:
Press Shift-Command-5 to open the screenshot toolbar.
Select the "Record Entire Screen" option.
Click anywhere on the screen to start recording, then scroll down to capture the full page.
Press Command-Shift-5 again and click the "Stop" button when done.

But that's a video. Not sure a video will be useful when the objective is an image.

Sorry I misinterpreted "long" screenshot as being a scrolling screenshot. The original post did not define "long" screenshot.
