Hi. I want to transfer data from my old iPhone X to the slightly newer iPhone 13. I already use an iPhone 13 so the "quick start" option doesn't work for me. Is there any other way to easily do this?

Yes you wipe the iphone 13 to factory setting, and YES you will LOSE all current data on the phone 13 and will be replaced with the iphone X. If you don't want that then don't proceed.
If you are asking if it is possible to keep the data on the iPhone 13 and simply add new data from the iPhone X to the iPhone 13.....this is not possible.
You cannot transfer data from the iPhone X or from a backup of the iPhone X to the iPhone 13 unless you first erase the iPhone 13 and then use Quick Start or transfer data from a backup during the setup to the iPhone 13.
If you do this, then the iPhone 13 will now look just like the iPhone X. Not what you want.
What kind of data?
If both devices are logged in to the same Apple Account, you can sync data in iCloud like contacts, calendar, Notes and email.
You can also manually download apps from the Apple Account's purchase history.
If you mean a full transfer, like setting up a new device from a backup or "quick start" then no, as mentioned you would need to erase the iPhone 13 and set it up again to use Quick Start or Restore from backup.
Otherwise, if you explain exactly what you are looking to transfer someone may be able to advise.
