Family Sharing
I want to share my purchased apps however I do NOT want to share my payment method, is there a way to remove the shared payment method so that I can share my apps but not my payment method

Not if you are the organizer. You can ask the family members to buy/redeem App Store/iTunes Gift cards to their account(s). Purchases will normally be withdrawn from the account balance before the organizer's card is charged.
