Is there a way to retrieve a deleted contact from my iPhone ?

This may be useful, it involves using iCloud dot com, but I’m unsure if it automatically takes “snapshots” that you can then use to rollback or whether you have had to manually do that previously.

You can also (I believe) Restore your Contacts from an iCloud or iTunes “BackUp” that was made prior to the “delete” event, but anything added afterwards will no longer be available for obvious reasons.
