Cancelled Apple Music, now can't access my own music on my iPhone XS

Last October I added quite a few albums of music that I personally owned from my computer to my new iPhone XS. Most originated from hard copy CDs, others from online non-Apple music vendors. I cancelled my Apple Music subscription this month, and I'm now being told I can't access these albums on my phone without an Apple Music subscription. However, the albums in question still play just fine on my computer.

If you used the iCloud Music library option to add them to the iPhone while subscribed to Apple Music, then yes those tracks become dependent on the subscription to be available on your iPhone since iCloud Music Library requires an active subscription.

Without a subscription you need to turn off iCloud Music Library in Settings->Music->iCloud Music Library, and sync them to the iPhone the old fashioned way.
