If you stiil have data on your iphone, you can create a new backup using a new password.

There's no way to restore data from an encrypted backup without knowing used password.

See this support guide:--> About encrypted backups in iTunes - Apple Support

at section: "If you can’t remember the password for your encrypted backup"
