There are two identical 'Desktop' devices showing in my account. The details i either don't match the laptop I am using. I don't know which is which and which is the one I am currently using. Can I delete them both and then add the one back in immediately? Thanks

You can delete both of them and then try adding the computer back. That shouldn't cause problems.
I have checked the list. That's where I saw that there are two 'desktops' listed and the details don't match. It shows both as Windows 6 (??) and my laptop is using Windows 10. So that is where my confusion comes in. Thanks.
To clarify, it also doesn't show any serial number, etc. just the operating sys it is running. Thanks.
If I delete a device, can I immediately add it back in to my apple account?
