I am a former Excel user and have been trying to use Numbers only for about 6 months. Is there a book or manual that I can buy to help me get use to Numbers? I have a 2019 MacBook Pro 16" with Catalina 10.15.2.

Lots of learning resources are "hidden in plain sight."
In your menu see Help > Numbers Help and Help > Formulas and Functions Help.
Also see the templates at File > New. There are many examples there that illustrate effective document organization and design in Numbers, which can be somewhat different from Excel.
If you want a full-length book you can try https://www.takecontrolbooks.com/numbers/. I don't have it but have read that other people find it helpful.
