When copying large files (e.g. a 50 GB offline map) I used to see a progress bar in iTunes (before Catalina). Now, when copying with Finder there is no progress bar and I have no clue when it has finished.

Look in the Finder sidebar. The ⏏︎ next to the Phone should change to a pie chart while the copy is in progress.

This would be nice, however there is no pie chart. The ⏏︎ icon remains unchanged and after some time of wanting the copied file suddenly appears.
The pie chart or spinning arrow shows while synching or backing up the phone. Copying must be using a different method.
