Personally, if it were mine I'd just use Migration Assistant and then after the migration is done uninstall the apps you don't want. That would be the most simple (and inexpensive) method.

No, it's all or nothing. However if you have 32 bit applications installed and you are migrating to a Catalina based system those apps will not run.
In addition, if you run any professional apps such as an Adobe or Microsoft Office apps those will not migrate however if they are 64 bit apps they can be re-installed.
I am wondering how I can move only certain apps such as photo library, drop box and quicken from my old Mac running on High Sierra 10.13.6 to my new computer. I am hesitant to move everything since there are somethings I really don’t want to overload on my new Mac.
You can but not using Migration Assistant. The process will be a manual one.
