Back each one up the same way as you would if you only had one device. See: How to back up your iPhone, iPad, and iPod touch - Apple Support
The backups will be separate. It may be easier for you to identify them if each phone has a unique name. You can set the name on each phone in Settings > General > About > Name.

Thank you for the information. I tried the above directions. As soon as I selected the option of set as new device (this is iPhone 11), I was presented the software license agreement. I checked the agree the terms and conditions and pressed continue and the phone simply disappeared from the sidebar. This doesn't happen with my iPhone X.
I have two iPads that sync to one, old, MacBook.
Connecting each by USB cables allowed me to set up syncing and do backups (if I wish).
